Week 3

Healthy diversity - easy to discover!

Spices

Today in the Belgian lumberjack pan

Anyone can use salt - try using spices such as nutmeg, paprika powder and pepper instead to give your dishes an extra kick.

Caraway is one of the oldest spices in the world and is still valued today for its antibiotic, antispasmodic and digestive properties - not to mention its delicious taste.

Nutmeg has an anti-inflammatory and digestive effect. A little tip: grate the nutmeg fresh over your dish to enjoy the full flavor.

Did you know?

A reduced salt content can help regulate blood pressure. The DGE recommends consuming no more than 6 g of table salt per day.

Secondary plant substances

Today in pumpkin falafel and beet salad

Today you are again being provided with an extra portion of secondary plant substances. This way you benefit from the anti-inflammatory and cholesterol-lowering effect and ensure a strong immune system.
Secondary plant substances also prevent dietary fats from causing too much stress in our system, as fats can also lead to the formation of free radicals in the blood.

Take advantage of a plant-based diet: the more colorful a plant-based food is, the more phytochemicals it contains.

Pumpkin falafel and strawberries contain alpha and beta-carotene as well as lycopene, flavonoids and phenolic acids, all of which have an anti-inflammatory effect. Beet contains flalvonoids and betanin, which has a particularly positive effect on the liver and gall bladder.

Dietary fiber

An extra portion of fiber from sun wheat

In this menu, Ebly® has replaced risotto rice.

Sun wheat impresses with its high fiber, vitamin and mineral content. In contrast to rice, Ebly® is also grown more sustainably; much less water is required for cultivation. This means that, in addition to your health, it is also good for the environment.

Protein/Proteins

Achieving good protein quality with the right combination

The biological value is a measure of how well a dietary protein can be converted into the body's own protein.

This dish with potato and egg has the best quality of the dietary proteins, as the chicken egg comes closest to the human protein. In combination, the biological value can even increase, so that the protein can be utilized even better by the body.

Did you know?

MHH pays great attention to sustainability when procuring food. For example, the eggs (Eipro GmbH & Co. KG) are sourced from organic farms and the potatoes (Rust Gebrüder GmbH) from regional farms.

"simple" carbohydrates

Homemade is always the best choice

A tangerine yogurt that can do more!

Today we are concentrating on dessert, where the canteen kitchen is always creative and doesn't serve you ready-made products.

In contrast to ready-made fruit yoghurt from the supermarket, this homemade yoghurt contains fewer "simple" carbohydrates, i.e. less sugar. The natural yoghurt used is also a valuable sour milk product, as the lactic acid bacteria support our microbiome and keep it in good shape. A delicious and healthy alternative that you can enjoy.
